Ingredients
  

Base

  • 4 corn tortillas
  • 4 eggs
  • 2 tbsp oil

Sauce & Toppings

  • 1 cup tomatoes chopped
  • 0.5 cup black beans warmed
  • 0.25 cup queso fresco crumbled
  • 1 tbsp cilantro chopped

Instructions
 

  • Warm and lightly fry tortillas in oil until just crisp.
  • Simmer tomatoes with onion, garlic, spices to form ranchero sauce.
  • Fry eggs to preferred doneness.
  • Assemble tortillas with beans, eggs, sauce, and toppings.
