Ingredients
  

Main Dish

  • 1 lb chicken breast cut into bite-sized pieces
  • 1 cup orzo pasta
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 2.5 cups chicken broth
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice fresh
  • 0.75 cup feta cheese crumbled
  • 1 tsp oregano dried
  • 0.5 tsp paprika
  • salt and pepper to taste

Instructions
 

  • Heat olive oil in a large skillet over medium-high heat.
  • Season chicken with salt, pepper, paprika, and oregano.
  • Sear chicken until golden and cooked through. Remove and set aside.
  • Sauté garlic in the same skillet until fragrant.
  • Add orzo and toast lightly for 1–2 minutes.
  • Pour in chicken broth and lemon zest. Simmer until orzo is tender.
  • Return chicken to skillet and stir to combine.
  • Remove from heat, add lemon juice and feta, and serve.

Notes

Add spinach or tomatoes for extra flavor and color.
