Ingredients

  • 1 lb large shrimp peeled and deveined
  • 1 bunch asparagus trimmed and cut
  • 3 tbsp extra virgin olive oil
  • 4 cloves garlic minced
  • 1 lemon zest and juice
  • 0.5 tsp crushed red pepper flakes optional
  • 0.5 tsp dried oregano
  • 0.5 tsp paprika
  • salt to taste
  • black pepper to taste
  • 0.25 cup fresh parsley chopped

Instructions
 

  • Pat shrimp dry and season with salt, pepper, paprika, and oregano.
  • Heat olive oil in a large skillet over medium-high heat.
  • Add garlic and red pepper flakes. Sauté 30 seconds until fragrant.
  • Add asparagus and cook 3–4 minutes until tender-crisp.
  • Add shrimp in a single layer. Cook 2 minutes per side until pink.
  • Add lemon zest and juice. Toss everything together.
  • Remove from heat and garnish with parsley. Serve immediately.

Notes

Great served over rice, quinoa, pasta, or with crusty bread.
