Ingredients
  

Pot Roast

  • 3 lb beef chuck roast
  • 2 tbsp olive oil
  • 1 large onion diced
  • 2 carrots chopped
  • 2 celery stalks chopped
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 3 cups beef broth
  • 1 cup red wine

Risotto

  • 1.5 cups Arborio rice
  • 5 cups warm beef broth
  • 0.5 cup Parmesan cheese grated

Instructions
 

  • Season and sear the beef chuck roast until browned on all sides.
  • Sauté vegetables, add tomato paste, deglaze with wine, and add broth.
  • Braise covered for 3 hours until fork-tender.
  • Toast Arborio rice with aromatics, then slowly add warm broth.
  • Cook risotto until creamy, then finish with Parmesan.
  • Serve shredded pot roast over risotto with pan juices.

Make pot roast a day ahead for deeper flavor.
