Ingredients
  

  • 2 ribeye steaks 1–1½ inches thick
  • 1 tbsp olive oil
  • 0.5 cup unsalted butter softened
  • 3 cloves garlic minced
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp smoked paprika
  • 0.5 tsp red chili flakes adjust to taste
  • 2 tbsp fresh parsley chopped

Instructions
 

  • Bring steaks to room temperature and season generously with salt and pepper.
  • Mix all cowboy butter ingredients in a bowl until smooth.
  • Heat oil in a hot skillet and sear steaks 3–4 minutes per side.
  • Lower heat, spoon cowboy butter over steaks, and baste for 1–2 minutes.
  • Rest steaks, slice, and serve with extra cowboy butter.

Notes

Adjust spice level by increasing or decreasing chili flakes.
