Ingredients
  

  • 2 lb chicken thighs bone-in or boneless
  • 1 cup dried figs chopped
  • 1 onion sliced
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 0.5 cup goat cheese crumbled

Instructions
 

  • Season chicken with salt and pepper.
  • Optional: Sear chicken in olive oil until lightly browned.
  • Add onions, figs, garlic, broth, and balsamic vinegar to slow cooker.
  • Place chicken on top of fig mixture.
  • Cover and cook on LOW for 6–7 hours or HIGH for 3–4 hours.
  • Adjust seasoning, then sprinkle goat cheese over chicken before serving.

Notes

Add goat cheese just before serving for best texture.
