Ingredients
  

Meatballs

  • 1 lb ground chicken or beef
  • 0.5 cup panko breadcrumbs
  • 1 egg large
  • 2 cloves garlic minced
  • 1 tsp ginger grated
  • 1 tbsp soy sauce
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp sesame oil

Firecracker Sauce

  • 0.5 cup sweet chili sauce
  • 0.33 cup brown sugar packed
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sriracha
  • 2 cloves garlic minced

Creamy Drizzle

  • 0.5 cup mayonnaise
  • 2 tbsp sour cream
  • 1 tsp lime juice
  • 1 tsp honey

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, mix all meatball ingredients until just combined.
  • Roll mixture into 1½-inch balls and place on the baking sheet.
  • Bake for 15–18 minutes until cooked through and lightly browned.
  • Meanwhile, combine all firecracker sauce ingredients in a saucepan.
  • Simmer over medium heat 5–7 minutes until thick and glossy.
  • Whisk creamy drizzle ingredients until smooth.
  • Toss baked meatballs in sauce and drizzle with creamy mixture before serving.

Notes

Adjust sriracha for heat level. These freeze well and reheat beautifully.
