Ingredients
  

Salad

  • 2 green mangoes julienned
  • 1 carrot julienned
  • 0.5 red bell pepper thinly sliced
  • 0.25 red onion thinly sliced
  • 2 tbsp fresh cilantro chopped
  • 2 tbsp fresh mint chopped
  • 0.25 cup roasted peanuts crushed
  • 2 Thai red chilies sliced

Dressing

  • 3 tbsp lime juice fresh
  • 1.5 tbsp fish sauce
  • 1.5 tbsp palm sugar or brown sugar
  • 1 tsp tamarind paste optional
  • 1 garlic clove minced

Instructions
 

  • Peel and julienne the green mangoes and place in a large bowl.
  • Add carrot, bell pepper, onion, herbs, peanuts, and chilies.
  • Whisk lime juice, fish sauce, sugar, tamarind, and garlic.
  • Pour dressing over salad and toss well.
  • Taste and adjust seasoning as needed.
  • Serve immediately for best texture.

Notes

Best served fresh. Adjust chili to your spice level.
