Ingredients
  

Pasta & Sauce

  • 12 oz pasta rigatoni or penne
  • 2 tbsp olive oil
  • 1 onion small, diced
  • 4 cloves garlic minced
  • 1.5 tsp red pepper flakes
  • 3 tbsp tomato paste
  • 0.5 cup vodka
  • 1 cup heavy cream
  • 0.5 cup pasta water reserved
  • 1 ball burrata torn

Instructions
 

  • Boil pasta in salted water until al dente. Reserve ½ cup pasta water and drain.
  • Heat olive oil in skillet. Cook onion until soft.
  • Add garlic and chili flakes. Sauté briefly.
  • Stir in tomato paste and cook 2–3 minutes.
  • Add vodka and simmer 2 minutes.
  • Stir in cream and pasta water. Simmer gently.
  • Add pasta and toss to coat.
  • Remove from heat and fold in burrata.

Notes

Adjust spice level to taste. Add protein if desired.
