Ingredients
  

Meatball Mixture

  • 1 lb ground chicken
  • 1 cup fresh spinach finely chopped
  • 0.75 cup feta cheese crumbled
  • 0.5 cup breadcrumbs or almond flour
  • 1 egg large
  • 2 cloves garlic minced
  • 0.25 cup onion finely chopped
  • 2 tbsp fresh parsley chopped
  • 1 tsp dried oregano
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 1 tbsp olive oil for brushing

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, combine ground chicken, spinach, feta, breadcrumbs, egg, garlic, onion, parsley, oregano, salt, and pepper.
  • Mix gently until just combined; do not overmix.
  • Form mixture into 1½-inch meatballs and place on baking sheet.
  • Brush tops lightly with olive oil.
  • Bake for 18–22 minutes, until cooked through and golden.
  • Let rest 5 minutes before serving.

Notes

Serve with tzatziki sauce, salad, or in grain bowls.
