Ingredients
  

Crust

  • 1.25 cups all-purpose flour
  • 0.25 cup powdered sugar
  • 0.5 cup unsalted butter cold, cubed
  • 1 egg yolk
  • 2 tbsp cold water

Cranberry Curd Filling

  • 3 cups cranberries fresh or frozen
  • 1 cup granulated sugar
  • 0.5 cup orange juice
  • 3 egg yolks
  • 2 eggs whole
  • 0.5 cup unsalted butter cubed

Instructions
 

  • Prepare and chill the tart dough, then roll out and blind bake until golden.
  • Cook cranberries with sugar and orange juice until softened.
  • Blend and strain the cranberry mixture until smooth.
  • Whisk eggs and yolks into cranberry purée and cook gently until thick.
  • Remove from heat and whisk in butter until smooth.
  • Pour cranberry curd into cooled tart shell and refrigerate until set.

Notes

Chill thoroughly before slicing for clean cuts.
