Ingredients
  

  • 2 lbs beef chuck cut into chunks
  • 2 tbsp olive oil
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 4 cups beef broth
  • 1 cup fresh cranberries
  • 2 apples sliced
  • 2 tbsp brown sugar
  • 1 cup apple cider
  • 2 sprigs fresh thyme
  • 1 bay leaf
  • 0.25 tsp cinnamon
  • salt and pepper to taste

Instructions
 

  • Brown beef in olive oil and set aside.
  • Sauté onion and garlic until soft.
  • Stir in tomato paste and deglaze with apple cider.
  • Add beef, broth, cranberries, apples, and seasonings.
  • Simmer covered until beef is tender.
  • Adjust seasoning and serve warm.
