Ingredients
  

  • 1 cup dry green lentils
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 0.25 cup red onion finely chopped
  • 0.33 cup Kalamata olives sliced
  • 0.25 cup fresh parsley chopped
  • 0.25 cup feta cheese crumbled
  • 3 tbsp olive oil
  • 2 tbsp lemon juice fresh
  • 1 clove garlic minced
  • 0.5 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Instructions
 

  • Cook lentils in water until tender, then drain and cool.
  • Prepare vegetables and herbs while lentils cool.
  • Combine lentils, vegetables, olives, and herbs in a large bowl.
  • Whisk olive oil, lemon juice, garlic, oregano, salt, and pepper.
  • Pour dressing over salad and toss gently.
  • Top with feta cheese before serving.

Notes

Tastes even better after chilling for 30 minutes.
