Ingredients
  

Chia Pudding

  • 1 cup coconut milk
  • 0.25 cup chia seeds
  • 2 tbsp maple syrup to taste
  • 1 tsp vanilla extract
  • 1 pinch salt

Mango Layer

  • 1.5 cups ripe mango diced
  • 1 tbsp lime juice optional

Extras

  • 0.5 cup coconut yogurt

Instructions
 

  • Blend mango and lime juice until smooth. Set aside.
  • Whisk coconut milk, chia seeds, maple syrup, vanilla, and salt.
  • Cover and refrigerate 3 hours or overnight.
  • Stir pudding until smooth and thick.
  • Layer chia pudding, mango puree, and yogurt in jars.
  • Top with fruit and coconut flakes before serving.

Notes

For best texture, chill overnight. Stir once after 30 minutes to prevent clumps.
