Ingredients
  

Sushi Rice Layer

  • 2 cups sushi rice
  • 2.5 cups water
  • 3 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt

Filling

  • 3 ripe avocados sliced
  • 1 cucumber julienned
  • 1 carrot julienned
  • 2 sheets nori cut to fit
  • 1 tbsp sesame seeds

Instructions
 

  • Rinse sushi rice and cook with water according to package instructions.
  • Mix rice vinegar, sugar, and salt; fold into warm rice and cool to room temperature.
  • Line a bowl or springform pan with plastic wrap.
  • Press a layer of rice into the mold, add nori, then layer avocado and vegetables.
  • Repeat layers, finishing with rice. Cover and chill for 30 minutes.
  • Unmold onto a plate, garnish with sesame seeds, slice, and serve.

Notes

Use ripe but firm avocados for clean layers.
