Ingredients
  

Sushi Rice Base

  • 2 cups sushi rice
  • 2.5 cups water
  • 3 tbsp rice vinegar
  • 1 tbsp sugar
  • 1 tsp salt

Fillings

  • 3 ripe avocados sliced
  • 1 cup cucumber julienned
  • 1 cup carrot julienned
  • 2 sheets nori cut to fit

Instructions
 

  • Rinse sushi rice and cook with water according to package instructions.
  • Mix rice vinegar, sugar, and salt; fold into cooked rice and cool.
  • Prepare avocado, vegetables, and nori sheets.
  • Line a round bowl with plastic wrap and press in a layer of rice.
  • Add nori, avocado, and vegetables; repeat layers, finishing with rice.
  • Press gently, cover, and refrigerate for 30 minutes.
  • Unmold onto a plate, garnish, slice, and serve.

Notes

Use ripe but firm avocados for best texture.
