Ingredients
  

Potato Bake

  • 2 lbs potatoes thinly sliced
  • 2 cups mushrooms sliced
  • 3 cups fresh spinach
  • 1.5 cups heavy cream
  • 0.5 cup milk
  • 1.5 cups grated cheese
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 2 cloves garlic minced

Instructions
 

  • Preheat oven to 375°F (190°C) and grease a baking dish.
  • Sauté onions and mushrooms in butter and olive oil until browned.
  • Add garlic and spinach, cooking until spinach wilts.
  • Whisk cream, milk, salt, pepper, and nutmeg together.
  • Layer potatoes, mushroom mixture, cream sauce, and cheese in baking dish.
  • Cover and bake for 45 minutes.
  • Uncover and bake 25–30 minutes until golden and tender.
  • Rest 10 minutes before serving.

Notes

Let the bake rest before slicing for best texture.
