Ingredients
  

Whipped Feta Base

  • 8 oz feta cheese crumbled
  • 4 oz cream cheese softened
  • 3 tbsp extra virgin olive oil
  • 1 tbsp lemon juice fresh
  • 1 clove garlic minced

Bruschetta Topping

  • 1 cup cherry tomatoes finely diced
  • 2 tbsp fresh basil thinly sliced
  • 1 tbsp balsamic glaze
  • salt to taste
  • black pepper to taste

Instructions
 

  • Add feta, cream cheese, olive oil, lemon juice, and garlic to a food processor.
  • Blend until smooth, light, and fluffy, about 1–2 minutes.
  • Transfer whipped feta to a serving bowl and spread into a swirl.
  • In a small bowl, combine diced tomatoes, basil, salt, and pepper.
  • Spoon tomato mixture over whipped feta.
  • Drizzle with balsamic glaze and extra olive oil.
  • Serve with crostini, crackers, or warm bread.

Notes

Make the whipped feta base up to 2 days ahead and store refrigerated. Add topping just before serving.
