Ingredients
  

Salad

  • 1.5 lb baby potatoes
  • 0.25 cup extra virgin olive oil
  • 1 lemon juiced and zested
  • 1 clove garlic minced
  • 0.25 cup red onion thinly sliced
  • 0.5 cup feta cheese crumbled
  • 0.25 cup olives or capers
  • 2 tbsp fresh dill chopped
  • 2 tbsp fresh parsley chopped

Instructions
 

  • Boil potatoes in salted water until fork-tender. Drain and cool slightly.
  • Whisk olive oil, lemon juice, zest, garlic, salt, and pepper.
  • Slice warm potatoes and toss with dressing.
  • Add onion, herbs, olives, and feta. Toss gently.

Best served slightly warm or at room temperature.
