Ingredients
  

Soup Base

  • 1.5 cups red lentils rinsed
  • 1 onion chopped
  • 3 cloves garlic minced
  • 2 carrots diced
  • 1 potato peeled and diced
  • 1 tsp ground cumin
  • 0.5 tsp turmeric
  • 6 cups vegetable broth
  • 3 tbsp olive oil
  • 2 lemons juiced

Instructions
 

  • Heat olive oil in a large pot and sauté onion until soft.
  • Add garlic and spices. Cook until fragrant.
  • Add carrots, potato, and lentils. Stir well.
  • Pour in broth and bring to a boil.
  • Simmer 20–25 minutes until tender.
  • Blend until smooth.
  • Stir in lemon juice, salt, and pepper.
  • Serve hot with parsley and olive oil.

Notes

Add lemon after cooking to keep flavor bright.
