Ingredients
  

Beef Filling

  • 1 lb thinly sliced beef sirloin or flank
  • 3 cloves garlic minced
  • 2 red Thai chilies finely chopped
  • 2 tbsp soy sauce
  • 1 tbsp fish sauce
  • 1 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 1 tbsp lime juice
  • 1 tsp sesame oil
  • 1 tsp cornstarch
  • 0.5 tsp black pepper

Rolls

  • 12-14 rice paper wrappers
  • 2 tbsp neutral oil for pan searing

Instructions
 

  • Mix garlic, chilies, soy sauce, fish sauce, oyster sauce, brown sugar, lime juice, sesame oil, cornstarch, and pepper in a bowl.
  • Add sliced beef and toss to coat. Marinate 20 minutes.
  • Soften rice paper in warm water and lay flat.
  • Place beef in center and roll tightly.
  • Heat oil in skillet over medium heat.
  • Sear rolls seam-side down until golden on all sides.
  • Garnish and serve hot.

Notes

Adjust chili for heat level. Serve with sweet chili or lime-soy sauce.
