Ingredients
  

Harvest Bowl

  • 2 cups sweet potatoes cubed
  • 2 cups Brussels sprouts halved
  • 1 cup cooked quinoa
  • 1 cup chickpeas drained and rinsed
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp cumin

Dressing

  • 0.25 cup tahini
  • 2 tbsp maple syrup
  • 2 tbsp lemon juice

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Roast sweet potatoes and Brussels sprouts with olive oil and spices until tender.
  • Roast chickpeas with spices until lightly crisp.
  • Prepare quinoa if needed and keep warm.
  • Whisk tahini, maple syrup, and lemon juice to make dressing.
  • Assemble bowls and drizzle with dressing before serving.
