Ingredients

  • 1 cup milk or spiced coffee

Cream Layer

  • 1 cup mascarpone cheese
  • 1 cup heavy whipping cream
  • 0.75 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp ground ginger
  • 0.5 tsp cinnamon

Instructions
 

  • Beat mascarpone with powdered sugar, vanilla, and spices until smooth.
  • Whip cream to soft peaks and gently fold into mascarpone mixture.
  • Dip gingerbread cookies briefly into milk or spiced coffee.
  • Layer cookies and cream in serving dish.
  • Repeat layers, finishing with cream.
  • Refrigerate at least 4 hours or overnight.
  • Dust with cocoa and garnish before serving.
