Ingredients
  

Lasagna

  • 12 lasagna noodles
  • 2 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 16 oz mushrooms sliced
  • 5 cups fresh spinach
  • 4 tbsp butter
  • 4 tbsp all-purpose flour
  • 2 cups milk
  • 0.5 cup heavy cream
  • 1 cup ricotta cheese
  • 2 cups mozzarella cheese shredded
  • 0.5 cup Parmesan cheese grated

Instructions
 

  • Cook lasagna noodles until al dente and set aside.
  • Sauté onion and garlic in olive oil until fragrant. Add mushrooms and cook until browned.
  • Add spinach and cook until wilted. Set vegetable mixture aside.
  • Prepare cream sauce by melting butter, whisking in flour, then slowly adding milk and cream until thick.
  • Assemble lasagna layers with noodles, ricotta, vegetables, sauce, and cheese.
  • Bake covered at 375°F for 30 minutes, uncover and bake 20 more minutes.
  • Rest 10 minutes before slicing and serving.

Notes

Let lasagna rest before slicing for clean layers.
