Ingredients
  

Quesadilla Filling

  • 2 cups fresh spinach chopped
  • 1 cup feta cheese crumbled
  • 0.5 cup mozzarella cheese shredded
  • 0.25 cup Kalamata olives chopped
  • 0.25 cup red onion diced
  • 2 cloves garlic minced
  • 4 flour tortillas
  • 1 tbsp olive oil

Instructions
 

  • Heat olive oil in skillet over medium heat. Add onion and garlic and sauté until soft.
  • Add spinach and cook until wilted. Remove from heat.
  • Mix spinach with feta, mozzarella, and olives.
  • Heat tortilla in skillet, add filling to one side, fold, and cook until golden.
  • Flip and cook until cheese melts. Repeat and slice to serve.

Notes

Serve with tzatziki or Greek salad for best flavor.
