Ingredients
  

Potato Base

  • 4 russet potatoes cubed
  • 2 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper

Taco Filling

  • 1 lb ground beef
  • 1 packet taco seasoning

Toppings

  • 1 cup shredded cheese
  • 0.5 cup sour cream

Instructions
 

  • Preheat oven to 425°F (220°C). Toss potatoes with oil and seasoning and spread on a baking sheet.
  • Roast potatoes for 35–40 minutes, flipping halfway, until crispy.
  • Brown ground meat in a skillet and stir in taco seasoning.
  • Divide crispy potatoes into bowls and top with taco meat, cheese, and desired toppings.

Reheat leftovers in the oven or air fryer to maintain crispiness.
