Ingredients
  

Potatoes

  • 2 lbs baby potatoes halved
  • 3 tbsp olive oil
  • 3 cloves garlic crushed
  • 1 tsp dried oregano
  • 0.5 tsp smoked paprika
  • 1 feta cheese block 8 oz
  • 1 tsp lemon zest

Instructions
 

  • Preheat oven to 425°F (220°C).
  • Toss potatoes with olive oil, garlic, oregano, paprika, salt, and pepper.
  • Spread potatoes on a baking sheet and place feta in the center.
  • Roast for 35–40 minutes, flipping potatoes halfway.
  • Finish with lemon zest and fresh herbs before serving.
