Ingredients
  

Salad Base

  • 1 lb ground beef or turkey
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 tbsp taco seasoning
  • 2 tbsp tomato paste
  • 1 head romaine lettuce chopped
  • 1 cup cherry tomatoes halved
  • 1 cup cheddar cheese shredded
  • 1 cup black beans rinsed and drained
  • 1 cup corn
  • 1 avocado diced
  • 2 cups tortilla chips crushed

Instructions
 

  • Heat olive oil in a skillet and sauté onion and garlic until fragrant.
  • Add ground meat and cook until browned. Drain excess fat.
  • Stir in taco seasoning and tomato paste with a splash of water. Simmer 5 minutes.
  • Chop lettuce and prep all vegetables.
  • Layer lettuce, meat, beans, corn, tomatoes, cheese, and avocado in bowls.
  • Top with crushed tortilla chips and drizzle with dressing.

Notes

Add chips right before serving for best crunch.
