Ingredients
  

Zucchini Boats

  • 4 zucchini medium
  • 2 tbsp olive oil
  • 1 red onion finely diced
  • 2 cloves garlic minced
  • 1 cup cherry tomatoes chopped
  • 0.75 cup feta cheese crumbled
  • 0.25 cup Kalamata olives chopped
  • 2 tbsp fresh dill chopped
  • 1 tbsp fresh parsley chopped

Instructions
 

  • Preheat oven to 375°F (190°C) and prepare a baking dish.
  • Slice zucchini in half lengthwise and scoop out centers.
  • Sauté onion and garlic in olive oil until soft.
  • Add chopped zucchini flesh and tomatoes; cook until moisture reduces.
  • Stir in feta, olives, herbs, salt, and pepper.
  • Fill zucchini boats and bake for 25–30 minutes.

Notes

Serve warm with lemon zest and extra herbs.
