Ingredients
  

Soup Base

  • 2 tbsp olive oil
  • 2 heads garlic peeled
  • 1 onion chopped
  • 6 cups chicken or vegetable broth low sodium
  • 1 bay leaf
  • 2 egg yolks
  • 2 tbsp lemon juice fresh
  • 2 slices day-old bread

Instructions
 

  • Heat olive oil in a large pot and soften the onion gently.
  • Add garlic cloves and cook until fragrant.
  • Pour in broth and bay leaf; simmer until garlic is tender.
  • Remove bay leaf and season with salt and pepper.
  • Whisk egg yolks with lemon juice and temper with hot soup.
  • Return mixture to pot and heat gently until slightly thickened.
  • Add bread, allow to soak, and serve hot.

Notes

Do not boil after adding egg yolks to maintain smooth texture.
