Ingredients
  

Soup Base

  • 2 bulbs garlic tops sliced
  • 2 tbsp olive oil divided
  • 1 yellow onion diced
  • 4 cups vegetable broth
  • 1 lemon zest and juice
  • 0.5 tsp turmeric
  • 0.25 tsp black pepper
  • 0.5 tsp sea salt
  • 0.5 tsp dried thyme
  • 0.25 cup coconut milk optional

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Slice tops off garlic bulbs, drizzle with olive oil, wrap in foil, and roast 35–40 minutes.
  • Sauté diced onion in olive oil until translucent.
  • Add spices and cook briefly to bloom flavors.
  • Squeeze roasted garlic into pot and stir.
  • Add broth and simmer 10 minutes.
  • Blend until smooth.
  • Stir in lemon zest, juice, and optional coconut milk. Serve warm.

Notes

Adjust lemon to taste. Add ginger for extra immune support.
