No-bake dark chocolate cups filled with naturally sweetened raspberry centers.

Ingredients
  

Chocolate Layer

  • 1.5 cups dark chocolate chips 70% cacao or higher
  • 1 tbsp coconut oil

Raspberry Filling

  • 1 cup fresh raspberries
  • 2 tbsp maple syrup
  • 0.5 tsp vanilla extract
  • 1 tbsp chia seeds optional

Instructions
 

  • Line mini muffin tin with liners.
  • Melt chocolate chips with coconut oil until smooth.
  • Add chocolate to liners and freeze 10 minutes.
  • Mash raspberries with maple syrup and vanilla.
  • Add raspberry mixture over chocolate base.
  • Top with remaining chocolate and freeze until set.
  • Store chilled and serve.

Notes

Store in refrigerator up to 1 week. Freeze for longer storage.
