Ingredients
  

Cookie Dough

  • 2 cups all-purpose flour
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 0.75 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 0.25 cup brown sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream

Brûlée Topping

  • 0.5 cup granulated sugar for caramelizing

Instructions
 

  • Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  • Whisk together flour, baking powder, and salt in a bowl.
  • Cream butter and sugars until light and fluffy. Add egg and vanilla.
  • Mix in heavy cream, then gradually add dry ingredients.
  • Scoop dough onto baking sheets and flatten slightly.
  • Bake 11–13 minutes until edges are set. Cool completely.
  • Sprinkle sugar over cookies and torch until caramelized.

Notes

For best texture, brûlée the sugar just before serving.
