Ingredients
  

  • 2 lbs chicken breasts boneless, skinless
  • 3 cups sweet potatoes cubed
  • 0.25 cup maple syrup pure
  • 2 tbsp Dijon mustard
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 tsp salt
  • 0.5 tsp black pepper

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet.
  • Toss sweet potatoes with olive oil, salt, and pepper. Roast 25–30 minutes.
  • Whisk maple syrup, Dijon mustard, garlic, and olive oil.
  • Sear chicken in a skillet until cooked through.
  • Add sauce to chicken and simmer briefly.
  • Assemble bowls with sweet potatoes and sliced chicken.
