Ingredients
  

Main Ingredients

  • 6 eggs large
  • 200 g feta cheese block
  • 1.5 cups cherry tomatoes halved
  • 0.33 cup Kalamata olives sliced
  • 2 cloves garlic minced
  • 3 tbsp olive oil extra virgin
  • 0.5 tsp dried oregano
  • 0.25 tsp red pepper flakes optional

Instructions
 

  • Preheat oven to 375°F (190°C) and grease a baking dish with olive oil.
  • Add tomatoes, olives, garlic, olive oil, and seasonings to the dish and toss gently.
  • Place the feta block in the center and bake for 15 minutes.
  • Remove from oven, create wells, and crack eggs into the dish.
  • Bake another 10–12 minutes until eggs are set to preference.
  • Garnish with fresh herbs and serve warm.

Notes

Serve immediately with crusty bread or pita.
