Ingredients
  

Enchiladas

  • 8 flour tortillas
  • 1 lb breakfast sausage
  • 8 eggs large
  • 2 cups shredded cheese cheddar or jack

Gravy

  • 0.5 lb breakfast sausage
  • 3 tbsp butter
  • 3 tbsp all-purpose flour
  • 3 cups whole milk

Instructions
 

  • Cook sausage in a skillet until browned. Remove and set aside.
  • Scramble eggs gently with milk and butter until just set.
  • Mix eggs, sausage, and cheese together.
  • Fill tortillas, roll, and place in greased baking dish.
  • Prepare sausage gravy by cooking sausage, adding butter, flour, and milk.
  • Pour gravy over enchiladas and bake at 375°F for 25 minutes.

Notes

Can be assembled ahead and baked fresh in the morning.
