Ingredients
  

Rice Layer

  • 2 cups sushi rice
  • 2.5 cups water
  • 0.25 cup rice vinegar
  • 2 tbsp sugar
  • 1 tsp salt

Spicy Salmon Layer

  • 1.5 lbs salmon skinless, chopped
  • 0.5 cup Japanese mayonnaise
  • 3 tbsp sriracha to taste
  • 1 tsp soy sauce
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar

Instructions
 

  • Cook sushi rice according to package instructions.
  • Mix rice vinegar, sugar, and salt, then fold into hot rice.
  • Combine chopped salmon, mayonnaise, sriracha, soy sauce, sesame oil, and vinegar.
  • Preheat oven to 375°F (190°C). Grease baking dish.
  • Spread rice in dish, top with furikake and salmon mixture.
  • Bake 18–22 minutes until heated through.
  • Garnish and serve with nori sheets.

Notes

Adjust sriracha to taste. Serve with nori and fresh toppings.
