Ingredients
  

Chicken & Bowl

  • 2 pcs chicken breasts boneless, skinless
  • 2 cups cooked jasmine rice
  • 1 cup shredded carrots
  • 1 cup sliced cucumber
  • 0.5 cup red bell pepper thinly sliced
  • 0.25 cup chopped cilantro
  • 0.25 cup chopped peanuts roasted

Peanut Sauce

  • 0.5 cup peanut butter creamy
  • 3 tbsp soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1 tsp fresh ginger grated
  • 2 cloves garlic minced

Instructions
 

  • Cook rice according to package directions and set aside.
  • Season chicken with salt and pepper.
  • Heat oil in a skillet and cook chicken until golden and fully cooked.
  • Whisk together all peanut sauce ingredients until smooth.
  • Toss cooked chicken with half the sauce.
  • Assemble bowls with rice, chicken, and veggies.
  • Drizzle remaining sauce and garnish with peanuts and cilantro.

Notes

Add chili sauce for heat. Great for meal prep.
