Ingredients
  

Chicken Marinade

  • 1.5 lb boneless chicken thighs
  • 3 cloves garlic minced
  • 1 tbsp ginger grated
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp lime juice

Crispy Coating

  • 1 cup all-purpose flour
  • 0.5 cup cornstarch
  • 1 tsp baking powder

Sauce & Assembly

  • 0.5 cup mayonnaise
  • 0.25 cup Thai sweet chili sauce
  • 4 brioche buns toasted

Instructions
 

  • Marinate chicken with Thai-inspired ingredients for at least 2 hours.
  • Prepare crispy batter with flour, cornstarch, and spices.
  • Heat oil to 350°F (175°C).
  • Coat chicken thoroughly and fry until golden and crispy.
  • Mix chili mayo sauce.
  • Assemble sandwich with sauce, chicken, and slaw.
